2017 Riesling Grand Klasse Reserve - Gard Vintners Estate Winery
Fermented and aged in a new Stockinger(from Austria) thick stave(45mm vs 27-30mm) 600L for 25 months before being sterile filtered for bottling. A long and warm year led us to have exceptional acidity and ripeness with this wine coming in with a pH at 3.0. Normally kept nearly dry we stopped this wine with ...g of residual sugar. The move to the bigger barrel and thicker staves slowed down the maturation allowing us to slowly coax more complexity and length out of this wine which was all acid in its youth.
