2014 Wrought Syrah - Dillion Cellars
We harvested the Syrah on the leading edge of ripeness wanting to explore just-ripe Syrah from Klipsun. After a 4-day ambient soak, the clusters were initially foot crushed, followed by punch downs. Whole cluster fermented with 100% native yeast & malolactic. Pressed into 25% new French oak barrels & aged for 28 months on fine lees.
