2014 Erratic Merlot - Dillion Cellars
Timing was critical for the Merlot this year as flavors & sugars developed early. After a 6-day ambient soak, we initially foot crushed, followed by punch downs. Whole-berry fermented with 100% native yeast & malolactic. Pressed into 33% new French oak barrels & aged for 28 months on fine lees.
